Minimal:

Everything:

Minimal - to me seems appropriate for a base DVD image for doing network (kickstart) installs.
Everything - apparently comes with all CentOS7 packages plus extra packages that are not automatically installed, but can be installed manually

You need to find an USB for create a bootable USB drives using the centOS.iso

That the one of the tools i uses:

Than you will have to enter the BIOS setting, and make the usb as your first boot drive.
